Time to Catch Up

Good Morning!  I can't believe it is already the last Sunday of October or that I haven't blogged in over a month. Things here in my little world have been really good and pretty busy.  So I'll catch you up on what's been going on.

We took down all of our old, raised garden beds.  They were made of cedar and were over 10 years old, so it was time.  I wasn't going to replace them until Spring but was reminded that now is actually the perfect time when I read a post from My Tireless Retirement.  I found really nice 8x4x1 metal beds marked down from 160.00 each to 36.00 dollars each.  BIG savings.  So they are all set up and ready for spring.

We decorated the front porch for Halloween and all of the candy and treats are ready for the little goblins this week.  We've had very little rain this month but of course Thursday it is forecast for rain.  If that happens his TKD students and my department will be the lucky backups to enjoy all of the treats.

To celebrate the fall season we've watched Hocus Pocus one and two a couple of times, Practical Magic and Scream 1 and 2. My days of watching gory movies have passed.  I've made sweet potato pie, pumpkin pie and an amazing Carmel Apple Bundt cake that I found on Barbs blog. Barb's Blog . . . (sweetheartsinlife.blogspot.com)   THIS cake is amazing!!  We've also been taking a lot of walks and visited Garden of the Gods a few weeks ago and Louisville KY last month for a weekend get-away. I hope to get some pictures of our area this week because we are almost at the peak of fall colors.  It's just gorgeous.


This week on the dinner table...
BIG salad
Lamb meatballs, rice and naan


Chicken nachos.  When I make them for the two of us, I like to make them in individual pans.  Super easy clean up too.


I used the left-over lamb meatballs and made hand pies. I cut up the meat, added diced boiled potatoes and gouda cheese and wrapped in my pie crust and bakes.  They were SO good I was really sad that I only made four.
The next night I used the left-over rice and made chicken stir fry and rice.  It was good too.


The freezer and pantry is stocked and ready for the next few months and all of the outside/inside work is done so I'm hoping I'll have more time now to post and to visit you.  I've missed hearing what everyone is up to.

  1. Glad to see you post - missed hearing about your adventures! You have been busy. Great deal of the garden beds.
    You know I have still to this day have never seen Hocus Pocus. I am just not much into Halloween movies at all, especially scary ones.
    Glad you have gotten so many things done. It is supposed to rain here as well Halloween - we sure do need it. I think the evening should clear for the kiddos.

    1. I was so happy with the price on garden beds. Huge savings. Hocus Pocus isn't scary at all. It's a pretty cute movie and I think you'd enjoy it. We have been busy and I'm excited for a little down time now. Have a good week!!

  3. It’s good to see you again here! I would love to hear about your trip to Louisville. We went there a few years ago and had a lot of fun. We went apple picking a month ago and I’ve made a lot of apple goodies since then. Finally used them up and yesterday I made a cinnamon pumpkin torte that I used to make all the time when my kids were younger.

    1. Hi Bijoux, thank you. We love Louisville and always have such a good time there. Maybe I'll do a post on it soon. Apples are so good this time of year and cinnamon pumpkin torte sounds delicious. You'll have to share that recipe.

  7. Good to see you! Glad you are all set with outside/inside stuff for the winter! That caramel apple bundt cake looks amazing. I printed out the recipe. I have some apples that no one is eating so it's a good way to use them up!

  8. Isn't it crazy how October is already basically over? I hope taking down the garden beds went okay. We just got a new cabinet painting in our kitchen this weekend. It feels like a totally new place. Couldn't be happier. Have a happy Halloween!

  11. Glad to see you returned to the land of the blogging. I do understand the 3d world getting in the way of it.
    I am right there with you on the gory movie refusal. When I was younger I loved a good scare, but as the movies got bloodier and bloodier and I got older and older I realized they were a waste of my time.
    Thanks for sharing the links to both blogs. I did look at the raised beds (with envy) and of course, bookmarked the cake. it looks beyond good.

    1. Thank you, Anne. If missed keeping up with everyone. Life does get in the way sometimes. I used to like gory movies too, but I just can't do it now. Plus I do think they are much gorier than they used to be. I don't think you will be disappointed in the cake. It's a keeper.

  13. Lori, I've missed your posts, and I'm happy to hear that you were just busy with good things. I've always wanted to have raised beds for gardening but have never done it because I would have to hire someone and never wanted to go to the expense. The Carmel Apple Bundt cake sounds amazing maybe even for Thanksgiving. Yum!!

    1. Thank you, Judee! I've missed chatting with everyone and seeing what you all are doing. I love the raised beds. If bending is a problem, they do have taller beds that are waist level. My neighbor has a few and they're nice. I don't think the cake will disappoint. It's a perfect fall dessert.

    I don't do gory or that Saw movie stuff. I just can't. I love stuff like Nightmare Before Christmas, Poltergeist, The Conjouring and things like Monster House, Monster Squad and things like that.

  15. No gory movies for me anymore. I think after my 20's they were no longer fun for me. Plus, they're even more gory now then the ones from the past. If I was thinking about moving, I would be doing the same as you. Moving is hard enough without adding a full pantry and freezer. I hope you have a great Sunday.
