Caramel Apple Bundt Cake

I first made this cake last fall after seeing it shared on Barb's blog.  She doesn't blog anymore so thankfully I printed the recipe out because this needs to be made every fall.  The recipe is originally from yourhomebasedmom.com


Ingredients

3 eggs
2 cups of sugar (I only used one cup, and it was plenty for us)
1 1/2 cups of oil (I used 1 cup of unsweet applesauce and 1/2 cup of oil)
2 tsp. vanilla extract
3 cups flour
1 tsp. salt
1 tsp. baking soda
3 cups of apples peeled and chopped (I used gala)
1 cup pecans chopped

Caramel Sauce
1/2 cup butter
1/4 cup milk
1 cup brown sugar
pinch of salt

Preheat oven to 350 degrees
Grease and flour a 12 cup bundt pan, set aside
In a mixing bowl, beat eggs until foamy then gradually add sugar, blend in oil and vanilla
Combine flour, salt and baking soda; add to egg mixture
Stir in apples and pecans
Do not over mix. Only stir to combine ingredients.  
Pour into bundt pan and bake for 1 hour until cake test done

In a medium saucepan, combine all ingredients for sauce, boil for 3 minutes, stirring constantly
Set aside
When cake is done let cool in pan upside down over a wire rack for 10-15 minutes.
Remove cake to a platter and slowly pour caramel topping over the cake. (I poked holes in the cake with a wooden stick so some of the caramel goes inside)

    Thanks for the modification tips, as I like to cut back on sugar and oil if it doesn't affect the taste too much.

    1. We don't care for very sweet desserts and cutting the sugar was perfect for us. The first time I cut it down to 1 1/2 cups this time I decided to try just 1 cup, and it turned out just as good.

  4. Bundt cakes are usually so moist and delicious. I made an apple crisp yesterday. We are still trying to get through the half a bushel we picked.

    1. Just make sure to butter and flour the pan really well and it should be fine. The two times I have made it; it came right out of the pan.

  14. I love a bundt cake! And i like that you've reduced the sugar and oil. Great idea. I often find cakes and sweets - well, too sweet :) Would have loved to see your cake!
