26 New to me Recipes for 2026 No. 1 Texas Cowboy Chicken

 


Back in 2024 I tried to do 52 recipes in 52 weeks.  I did well for a bit and then couldn't continue due to a lack of time for that crazy of a goal.  I've decided for 2026 to do 26 new to me recipes and I think that is much more realistic for where I am in my life right now.  

The first one is...

Texas Cowboy Chicken from Delicious Tonight by Nagi Maehashi 

3 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
1 tbsp. olive oil

Marinade
1 tsp. chipotle powder
2 tsp. smoked paprika
1/2 tsp. granulated garlic or powder
1/2 tsp. granulated onion or powder
1/2 tsp. dried oregano 
1/2 tsp. ground cumin
1 tsp. sugar or honey
3/4 tsp. salt
1/4 tsp. black pepper
1 tsp. lime zest
juice of one lime
2 tbsp. olive oil

Mix all of the ingredients for the marinade in a small bowl.  Add the chicken to ensure each piece is coated and cover with plastic wrap and put in the refrigerator.  Marinate for up to 24 hours, no less than 2. (I marinated for 4 hours)

Heat the olive oil in a large skillet over medium high heat.  Add the chicken and cook each side for 3 minutes or until deep golden.

Transfer to a plate and cover loosely to rest for 3 minutes.

Slice the chicken to serve.

She recommends a Cowboy Chicken Salad with chipotle dressing that sounds delicious and I will try that the next time I make it.  This time I served it with whipped garlic potatoes and green beans, and it was amazing.  I will be adding this to the chicken rotation at our house.  The left-over chicken was still tender and juicy, and I reheated it for sliced chicken sandwiches the next day for lunch.  

We both give this a 9 out of 10.

  5. Hi Lori! I love that you modified your goal to better suit. That's what I love to do as well AND, that mixture is close to one that I use on many things. Those ingredients are just so darn tasty together. Wishing you lots of fun this year.

    1. This will be more realistic. I use a similar spice mix for many things also. They are all some of my favorites.

  7. I'll be looking forward to seeing your recipes. You are off to a good start with the chicken recipe. I very seldom plan what I will post on the blog and I amaze myself sometimes that I keep coming up with things. I try for 2 posts a week.

    1. I don't plan either which is probably obvious. I mainly blog for my own look backs but if people enjoy some posts that does make me happy and I love interacting with everyone.

  8. Ha ha, I was just this second thinking of you as I clicked on your blog about your 52 recipes in 2024. I wrote the same down for this year (starting with Burmese chicken for week one). I doubt I'll keep it going (or at least not when I'm travelling) but you've gotta start somewhere right?

  9. I already knew this was going to be delicious. Subtract the oregano and chipotle powder and you pretty much have what I put on my steaks before I cook them.

  11. This sounds so good! I have really cut back on cooking as I’ve gotten older, but ever since my refrigerator went out, five days ago, I have been champing at the bit to cook something. I still have until Friday before it arrives, hopefully early rather than late. I’m definitely going to be trying this.
