It is the time of year in my area where zucchini is abundant. A lot of gardeners are begging to give it away.
I love zucchini so I make the best of it and here are a few of my favorite recipes to enjoy this short window when I have more zucchini than I know what to do with.
Zucchini Fritters
1 1/2 pounds zucchini (about 2 large or 4 medium)
2 eggs
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
2 green onions (chopped)
2/3 cup all-purpose flour
Oil for frying
Line a large bowl with a thin kitchen towel or cheesecloth. Grate the zucchini directly into the bowl. Gather the towel and squeeze firmly to remove as much liquid as possible.
Transfer the zucchini to a large bowl. Add salt, pepper, garlic, green onions, flour and eggs. Mix un til just combined.
Heat a layer of oil in a large skillet over medium-high heat. Spoon 2-3 tablespoons of the mixture into the hot oil and gently flatten.
Fry for 3-4 minutes per side or until golden brown and crisp. Transfer to paper towel to drain.
Serve hot with sour cream or your favorite dipping sauce. (They are really good with Ranch)
Zucchini Bread
1 3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/2 cup oil (I use avocado or coconut)
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1/4 cup unsweetened applesauce (or sour cream or Greek yogurt)
2 teaspoons vanilla
1 1/2 cups shredded zucchini (no need to blot)
Optional-chopped nuts of your choice
Preheat oven to 350 degrees. Grease a 9x5 loaf pan
Whisk the flour, baking powder, baking soda, salt, cinnamon and nutmeg together in a large bowl and set aside.
In a medium bowl, whisk the oil, both sugars, eggs, applesauce and vanilla until combined then whish in the zucchini.
Pour the wet ingredients into the dry ingredients.
Gently stir until combined; do not overmix.
Fold in nuts, if using.
Batter will be slightly thick.
Spread batter evenly into the prepared pan. Bake for 55-60 minutes until a toothpick or knife comes out clean.
Cool in pan for 1 hour before removing.
Zucchini 'fries'
Thinly dice a small to medium zucchini in rounds.
Dredge in flour, then egg and then panko or breadcrumbs. (I also add a bit of salt, pepper, garlic and paprika to the flour and breadcrumbs.
Place on a cooking sheet lined with parchment paper and a swipe or two or olive oil or avocado oil.
Bake in a 350-degree oven for 30 minutes turning once at the halfway point.
You can also shallow fry in a pan or cook in the air fryer.
I also make zucchini tots and they are delicious. See the recipe below
Other things I've tried:
Zucchini noodles
Zucchini boats
Parmesan roasted zucchini
Shredded zucchini is a wonderful addition to traditional spaghetti sauce
What are some of your favorite ways to use zucchini? I am always looking for new ways to try it.
Yay for more recipes. I'm going to give your recipes a try over the coming weeks even though I have both a bread and a fritter version. Ive not veen 100% happy yet with my fritters. Love the tots option.
ReplyDeleteThe fritters are very crispy, and the tots are a nice treat. I made zucchini bread last week and had forgotten how much I love it.
DeleteI love all the things you mentioned. Zucchini is so versatile and take on the flavor of anything it is paired with.
ReplyDeleteHmmm - about time for zucchini boats here!
Me too Cheryl. I remember it was probably May when TBG was asking how long before zucchini? We really do enjoy it.
DeleteThanks for the recipes. I really need to freeze some to use later. The fries are intriguing. I never heard of zucchini used that way but it looks good!
ReplyDeleteI plan to freeze some this weekend too. The zucchini fries are a favorite at our house.
Deleteplanted the garden so late I don't have any zucchini yet!
ReplyDeleteI am sure they will come eventually.
DeleteI used to work with a guy who always had a ton of zucchini. I haven’t had any in a long time. I love zucchini bread
ReplyDeleteZucchini bread is delicious. I am going to make two more this weekend for the freezer.
DeleteThank you for the ideas
ReplyDeleteYou are very welcome.
DeleteTons of zucchini at the farmer markets these days. They sell them in cartons :-) The zucchini fries look quite tempting!
ReplyDeleteYes, they are everywhere here this time of year too. Zucchini fries are so delicious.
DeleteWe did not plant zucchini this year because of the resident groundhog. I am not sad
ReplyDeleteWe have a groundhog, but he seems to be preoccupied by something this year because he has totally left the gardens alone. So far.
DeleteThank you so much for those recipes. I'm always looking for recipes for zucchini and eggplant (although I find tasty recipes more difficult for eggplant). Will definitely try the fritters this week!
ReplyDeleteZucchini is such a versatile vegetable and so good in so many ways. I'm not a big eggplant fan.
DeleteNot Bossy here...Lori I love zucchini and we got the garden in late this year so still waiting, but it will happen!
ReplyDeleteToo bad we aren't closer because I have more than enough to share.
DeleteThank you for the recipes. I love stuffed zucchini, boats, zucchini pan fried with onion, fritters. I have used zucchini in place of pasta and like it.It's so versatile. I get mine from my neighbor.
ReplyDeleteZucchini is so versatile which is one reason I love it too. It's nice you have a neighbor that shares with you.
DeleteOne can never have too many zucchini recipes. Thanks for sharing. They all look good. I also like to serialize my zucchini and eat it like spaghetti with sauce.
ReplyDeleteThere are so many great ways to use it. Yes, zucchini noodles are delicious.
DeleteI love how versatile zucchini's are. So many great recipes.
ReplyDeleteI do too. It's a good thing too since I always end up with so many.
DeleteI love zucchini, I have loads of wonderful recipes for it, but I cannot grow it. I know that sounds strange because as you mentioned, people tend to give it away they get so many, I’ve never gotten one.
ReplyDeleteThere is no zucchini shortage in our town. I'd guess there is a pile on every breakroom around. I wonder why you haven't been able to grow them.
DeleteI have no idea why I haven’t been able to grow them, but I have tried forever and it’s never worked. As I look at my deck garden, in this heat, with the green beans finished, the tomatoes covered in blight, and a cucumber plant that yielded nothing more than bitter cucumbers, I’m wondering why I bother to grow things on my own and why don’t I just take that money to the local farmstand.
DeleteThat is odd how nothing seems to be doing well. As long as I use a good soil and pay attention to when they need water I usually have success except the years a squirrel, groundhog or rabbit get there first. I think I have that taken care of though because the don't go in at all now.
DeleteI miss making zucchini fries, but I don't miss the cleanup afterward.
ReplyDeleteThey are my favorite.
Deleteback in my gardening days I quickly learned one zuke plant was enough as it put out like gangbusters and everyone had similar ; you could not give them away .
ReplyDeleteI planted two and that is more than enough along with friends/neighbors trying to give me theirs.
DeleteDid ours with panko! Soooo good!
ReplyDeleteThey are delicious.
Delete.❤️
Deleteour local Italian does zucchini fritters (fries) which are sooo popular!!
ReplyDeletesherry
They are so good. During the winter, I do crave them so I'm getting my fill this summer.
DeleteThanks about the vlogging. That went on hold. Post coming about it at some point.
ReplyDeleteHope you're doing well!
DeleteThank you, I really am. Enjoy Augtober. Trees changing and in the mornings I often need a hoodie. New pup now here 5 weeks yesterday. Time goes quick. Hope you're reading outside and enjoying your lovely yard/garden.
DeleteYou need to post a picture of your new puppy. I haven't been reading near as much as I usually do but I will get back to it soon. I have enjoyed the yard and garden though. Have a great week Ivy!!
DeleteIt's so weird that we don't get many zucchini. My husband said this year it's because we have mostly male flowers. Middle Child goes out there and tries to pollinate with a little paint brush, but I don't know if it helps. My favorite recipe I have is for a zucchini chocolate cake/bread. It's so rich and yummy!
ReplyDeleteHello!! I hope you're enjoying your summer. Yes, there are male and female flowers and that can make a difference. I've heard you can self-pollinate like that. That zucchini chocolate cake/bread does sound very good.
DeleteI don't much get into zucchini but these recipes sound delicious and now my mouth is watering, haha xoxo 🏴☠️
ReplyDeleteI love zucchini and always miss it so much during the winter.
