My Weekly W's

What's top of my mind:  It's a jumbled mess up there so we're skipping this one this week.

Where I've been: I did make one trip to Kroger but other than that I've been at home or work. The weather has been gorgeous, so I have spent a lot of time outside which is wonderful.

Where I'm going: I will be working all week and then next weekend we are going to do some shopping and have a lunch date. 

What I'm watching: The sunrises.  This week every sunrise has been amazing.  I only live a mile from work but that short drive this time of year is gorgeous.

What I'm reading: I finished Finding Betty Crocker.  It was interesting but infuriating at the same time. To tell women they need to clean the house, make a delicious dinner and fix yourself up or you'll lose your husband is just mind boggling to me. I started The Answer Is by Alex Trebek yesterday.  So far it is a really good read.

What I'm listening to:  I enjoy not having the heat or AC on and the windows open.  I can hear all the birds every morning and every evening and it brings a peaceful calm to my days. 

What I'm eating:  Thai chicken and veggies over rice.  This year's snow peas have been delicious!

We had lunch catered Wednesday at work and enjoyed a delicious Cinco de Mayo meal from Agave.  Then for dinner I made steak fajitas, rice and chips and salsa.  

Chicken and veggies with 4 cheese mac. I'll share the recipe later this week.  This is a good mac and cheese.




Who needs a good slap: A healthcare organization that creates their own insurance company, sells it to their employees and then adds the caveat that you have to use their physicians and facilities only. This isn't an out of network reduction, this is a flat out cannot go out of network. This was implemented in January and we are loosing a LOT of good employees and physicians because of it. I had a long talk with someone that has worked there for 38 years and recently survived cancer.  We were both in tears by the end of our talk.  My heart just broke for her.  I know some may say well at least you have insurance.  Possibly but taking our rights away to see who we choose and being able to use facilities with better prices is a dictatorship.  

What I'm planning: I've planned my Birthday trip to Louisville and now I'm on to planning a BBQ for the big guys Birthday in July.  

What's making me smile: This article really made me smile.  Both sides of my family always ate at the dining room table and I made that a rule when I started my own home so I know how the author feels.  The food is important but the people at the table and the memories are what make it special.  How a Single Mom Conquered Dinner, One Pound of Hamburger at a Time (food52.com)

  1. I enjoyed that article from Food52.com. I think something valuable has been lost with those families that do not sit around the dinner table and share a meal together at the end of the day. We did it growing up and then married we did it with our children as much as we could with schedules and all, but it was a high priority to be together like that. Wow with the insurance issue at work. That sounds like a nightmare. It is a shame it is coming to the losing of good employees/physicians. I don't think I have ever heard of an insurance plan that at least let you consider going out of network but still covered a bit of the cost. I had to laugh about the advice in the Betty Crocker book. I still remember my 9th grade home economics teacher teaching us to take care of as much cleaning up before dinner that we could so that after dinner we would spend less time cleaning up and more time with our husbands who worked so hard for us. My how the times have changed! Who can resist a mac and cheese that has 4 cheeses in it? I look forward to the recipe! There is nothing like a good sunrise or sunset, especially a good sunrise on the way to work. A great way to start the work day!

    1. I'm glad you enjoyed the article. I really did too. I've spent my entire life eating at the dining room table and have so many good memories.
      I heard about the changes in January but honestly thought the same that they just wouldn't pay as much if we went out of network. I just recently found out from others the full details. It does not sit well with me. The main reason I've kept this job is for the insurance. I think I'm going to have to do some serious thinking on this.
      Your home economics teacher must have been a Betty Crocker fan. :-)

  2. That insurance issue is no bueno. I'd be furious as well. I mean, what if you can't choose your doctor and you're stuck with an incompetent one? What if you need a second or third opinion for something?

    I hope next week goes better than this one.

    1. I'm beyond furious. Our organization is one of the most expensive in the area. A couple of years ago my husband had an allergic reaction to his blood pressure meds. I took him to the other local hospital and we were out of there in less than an hour and it only cost us 300.00. If we had gone to this hospital he would have been admitted and it would have cost thousands. You can still choose your doctor but it has to be one in our organization.

  3. I am looking forward to the macaroni and cheese recipe! And I so enjoyed that article. When I was young, my mother had dinner on the table at 5:30 every night. And as a mother myself, I made it a priority to make dinner and sit as a family every night too. No one does that anyone it seems. My children's friends always wanted to stay for dinner and I know it was because they didn't have the same chance to gather and visit and enjoy food and family. They were running here and there, from one practice to the next, eating drive thru on the way. Anyway, Happy Mother's Day to you!

      I am glad we always ate at the table and still do to this day. It makes memories for us and that is what is important.

  4. Health Care is becoming a Game of "Do As I Say," in so many aspects. Another aspect of... "Big Guy Tells You What To Do And You Had Better Be Happy About It."

    And of course, the *Biggest Big Guy* is the Government. *Who* will tell you what to do, and "take care" of you. -Gagggggggggggg-

  7. Oh that is infuriating about your insurance company! The advise in that Betty Crocker book is hilarious! I can't imagine that today! All of the food looks delicious!

Well I haven't read the book or the article but from what I've sensed from your comments and those of other readers, all I can say is that in order for everyone to sit down to a home cooked meal, someone has to be there to prepare it! I love a clean house (although I don't do the deep cleaning myself anymore, only the day-to-day pickup, but rather pay someone else to do it) and we have always had our meals together at the table, especially when the children were at home. And I do enjoy fixing myself up too, both for me and for my husband. I'll stick with that plan although if I deviate from it, I'm not afraid of losing him, haahaa. xoxo

    1. Some of the letters and information "Betty" gave out over the radio was very degrading in my opinion. I do love to cook, have a clean home and take care of myself but to hear her tell women they will loose their husbands if they don't or he will be mad and start an argument if his dinner isn't perfect...that was just cruel.
