My Weekly W's

What's top of my mind: Too much loss.  Almost everyone I talk to has unexpectedly lost friends or family in the last couple of months.  This week the big guy lost a friend that was only 51.  Death is always sad no matter the age or circumstance but for so many people to pass lately that are relatively young really makes you stop and put life in perspective.

Where I've been: We did go out to breakfast yesterday and really enjoyed it.  Other than that and work, I didn't go anywhere.

Where I'm going: Other than work, no plans as of yet.  I don't think we'll need any groceries as we are pretty stocked up.  The weather is supposed to be pretty decent this week so I may venture out into the backyard.  lol

What I'm watching: I had Modern Family on while cooking this week.  I just love that family.

What I'm reading: Midnight Chicken

What I'm listening to: Keeping it quiet when possible.

What I'm eating:

Cheeseburger egg rolls, air fried potato wedges
BIG salad
Chicken fajita, rice and cheese roll up
Meatloaf, mashed potatoes and salad
Stuffed shells, salad and garlic knots.  I cut leftover meatloaf into cubes and added it to pasta sauce and made two pans of stuffed shells. One is uncooked and in the freezer for another meal. Each pan gives us a dinner for two and a lunch for me.

Coho salmon, rice and brussel sprouts
Tonight, I'm roasting a chicken but haven't decided on sides yet.

I also found some beautiful and delicious Florida strawberries that I made into a batch of jam.  It is SO good.  I tried a pectin free recipe for the first time and even though it was just a bit looser than normal, but it was good and I'm going to experiment with a bit more lemon juice to see if I can get the consistency I like.

Who needs a good slap: China officials.  They seriously said that the US overreacted by shooting down whatever it really was that they sent into our air space.  Unbelievable.

What I'm planning: The big guy's birthday is in July and I'm planning a party.  We don't usually celebrate with parties, but I think after everything that's happened the last three or four years, we need to this year.

What's making me smile: Eight months ago yesterday we rescued Binx.  I can't believe he'll be a year-old next month.  Binx is unlike any cat we've ever had with more energy than I've ever seen.  This winter he has started snuggling though which is nice.  He's definitely brought a lot of love and laughter into our lives.

How was your week?

I hope everyone is doing well.  Stay safe!!

  1. Hi Binx!

I'm sorry to hear about your losses. Things are pretty crazy right now, especially when everyone it seems has a cavalier attitude about getting sick. I was invited by a friend to go to a restaurant, and I told him "No, no, no" faster than the late Amy Winehouse.

Stuffed shells sound really good right now. I hope you have a better week this week.

  2. Thank you! Yes we're still avoiding the public. We actually ate outside even though it was a bit chilly it was sunny and doable. SO many people are sick here also.
The stuffed shells are so good. I hope you have a great week also my friend.

  3. Every birthday deserves a party! I'm with you on that. I made stuffed shells a week ago and had a terrible time finding the actual pasta shells. Same thing happened to me a year ago. Do people not make them anymore?? Found them at third store I went to and there was only one brand of them.

    2. Every birthday does deserve a party Bijoux!! I had trouble finding them last year and as soon as I saw them I picked up two boxes this past year. I'm out now so I'll see how hard it is to find them. There are a lot less brands on many things here I've noticed.

  10. I am sorry to hear of your recent losses. The current state of affairs is chaotic, especially since it appears that everyone is treating illness with a casual attitude. I wish you a wonderful week.

    1. I didn't watch much news about the whole thing but caught the part where they said the US over reacted about the whole thing. Really?? Binx is the best.

  13. Hi Lori~ I'm so sorry about your husbands friend, my condolences to both of you. It seems like every time I read the obituaries there is someone I knew who has passed...it's so sad. China needs a good hard slap! I really hate that they play the US for fools. Your baked shells look delicious. While I was reorganizing things today I found two boxes of large shells. I think it will be dinner on Monday night. Binx is adorable! I have a soft spot for black cats, I think they are so cute. Have a wonderful Saturday. Barb

  17. I thought about leash training a few of my cats but they freaked out so much when I tried to put the harness on them, I gave up! They stayed only indoor cats for all of their lives! So sad about that girl in NJ.

    1. All of our cats have been inside only too. Binx just has SO much energy I thought it would be good for him to get outside with me sometimes. I bought one of the leashes that you only have to put his front feet into and then close it up across his back and attach the leash. He wasn't bothered by it at all which actually surprised me a little. lol
