Stuffed Peppers

I really enjoy stuffed peppers, especially in the Summer when everything is fresh.  I saw this and wanted to share.  I think these would make delicious light meals.  The possibilities are endless.  Stay cool everyone.

  3. Those do look wonderful. I stopped buying peppers of any color because a few years ago they all began tasting like fuel to me. I know; weird, right? No one else tastes it but that's ALL I taste! I wonder what it means. xoxo

    1. I can tell the difference between store bought and farrm fresh. I always dice and slice bags of them in the summer to freeze and enjoy during the Winter so I don't have to buy them at the store.

  7. I haven't had stuffed peppers in quite a while. These variations take stuffed peppers to whole new level.

  8. Those all look absolutely delicious!! I'm going to try the Caprese & Greek ones first. We love stuffed peppers. I make a lasagna stuffed pepper. Fill pepper with meat sauce & top with mozarella. I usually add veggies to my meat sauce (mushrooms, spinach, red peppers), so it's loaded with goodness. Thank you for sharing! Hope you, the big guy & Binx have a wonderful weekend!

  9. i love capsicums (peppers) and i used to make piedmont capsicums often. Filled with rice and anchovies and olives. so tasty.

  11. I just bought a bunch of peppers yesterday so now you've given me ideas. My family's favourite meal was always beef and rice stuffed peppers but now I'm on my own I can try out a few different ideas, although I have made them stuffed with couscous. Lovely!

  13. Those look good although I'm not a fan of cooked peppers. For some reason they taste so different to me. One of my favorite snacks is a half of a green pepper with cream cheese and everything bagel seasoning.
